Ginger Nut Slice

This recipe is so easy. All you need is an oven, food processor and slice tin. It’s delicious that you wouldn’t know it was actually healthy! It’s not only good for you, but is gluten free and dairy free and provides the health benefits of ginger. Here’s 5 of the awesome benefits of ginger:

  5. Eases cramps, tummy upsets and nausea
Ingredients
- 1 cup of raw cashew nuts
- 1 cup of raw sunflower seeds
- 1 cup of sultanas
- 3 teaspoon of ground ginger
- 1/4 cup melted coconut oil
- 1/4 cup water

Method
1. Preheat oven to 200'C. Line a 20cm slice tin with baking paper.
2. Place cashew nuts and sunflower seeds in a food processor and pulse until the nuts resemble coarse crumb.
3. Add ginger and sultanas and pulse until combined.
4. Add liquid ingredients and pulse until the mixture is a chunky paste.
5. Press mixture into lined slice plan.
6. Bake in oven for 15 minutes or until golden or cooked to your liking.
7. Allow to cool and keep in fridge before serving.
